Winter blues-berry ice cream


Sometimes you can’t help but daydream about those hot summer days where you’d be caught cooling off with a cold treat.

Well, fight those winter blues! You can enjoy this cold, healthy blueberry treat all year long.

Topped with frozen blueberries
Give your body the nutrients it needs during the day and eat blueberries to provide antioxidants.

I enjoy this blueberry ice cream recipe because it can be easily made and you don’t feel like you shouldn’t be eating it (unlike other fatty ice creams out there.)

Using Blender Babes' blueberry ice cream recipe that I found online, I decided to use almond milk because it is lactose-free (for those of you poor souls like me that are sensitive) and has less sugar in it. Almond milk is a healthy ingredient choice.

Only four simple ingredients and one touch of a button.



Melly's Bellies' Recommendations: 

1. When using your blender to crush the ingredients, I found allowing it to "pulse" worked to my advantage. By just clicking the "blend" or in my case, locking it down to mix with the NutriBullet, I found it just clogged up and did not move. So, lesson of the day: make that blender pulse and it will be sure to mix in smoothly.

2. If you use frozen blueberries you don't need much ice. It will be too much ice for the blender to handle and will water down flavours in the process.

3. Using vanilla-flavoured almond milk worked to my advantage by crossing one more ingredient off the list. If your milk is vanilla-flavoured there is no need for the vanilla extract the recipe calls for.

    1. For sure. One thing to keep in mind is that it won't be exactly like the ice cream you are use to. It's more of a frozen-fruit treat, but the creamier the milk you add the more ice cream texture it will be. I used almond milk so it wasn't creamy at all.
